Christian has now decided to be a vegetarian. A OVO-LACTO-VEGETARIAN to be exact. This definition was pulled from a vegetarian website: "Ovo-lacto vegetarians are vegetarians who do not consume meat, poultry, fish, and seafood, but do consume eggs and milk. This is the largest group of vegetarians." Everything he likes of mine including enchiladas have chicken and/or beef. At least he'll eat eggs and milk still! So...anyone have any good recipes that fit into this category?
What kinds of protein is he willing to eat besides cheese and eggs? Beans? Tofu? There are quite a few meat substitutes you can use that are soy based, but they can get a little pricey.

I mean, I was a vegetarian for about 10 years, but I can't quite imagine going back to that as a married person. (Unless, of course, the spouse was vegetarian also.)
I think beans will be a protein for him. I don't know if he's jumped on the tofu wagon yet...I guess we'll see. He asked me if I'd do it with him and I had to decline. I like my meats too much! I guess I'll be doing those for lunches now...
ReplyDeleteMy mom loves tofu, even though I am not quite a fan. They use to bread it and fry it in EVOO or something. I thought about the veg. thing, but then decided against it because I don't know how long I could live without meat.

ReplyDeleteWell, I have a couple suggestions for cookbooks. MooseWood Restaurant is a vegetarian restaurant and they have a number of cookbooks that have good things in it. I'm pretty sure they have them at the library.
ReplyDeleteIf he's going to be healthy and successful at this whole vegetarian thing, he'll need to find more protein sources. You won't want to have eggs or beans every single night for dinner.
There are some good curry recipes with chickpeas (garbanzo beans) as the protein. Will he eat chickpeas?
I'll look in my recipes and see what I can come up with for you.
Also, beans aren't a complete protein, so it's good to have rice with it too. That completes it.
Oh man, I have zero suggestions. My dad was a rancher, so becoming vegetarian would probably result in getting kicked out of the family. :) Just kidding! Good luck with that!
